Baked Salmon

This is my son's favourite dish.It is really simple and easy to do.


Ingredients

Salmon                     -      1 piece
Onion                       -      small piece
Ginger                      -         "   "
Green Chilly              -      2
lime juice                  -      1 tsp
garlic                        -      2 cloves chopped
olive oil                     -      1 tbsp
salt                           -      1 tsp
Foil paper


Grind onion, ginger,chillies adding salt and lime juice to make a paste. To this add olive oil, chopped garlic and mix well.
Keep the fish on the foil paper and coat it with the paste. Now wrap the foil nicely to hold the juices inside.  Let this marinated fish sit for 15-20 minutes.

Now, transfer this fish wrap to a baking tray and bake this at 250 F, for 20 minutes turning upside down every ten minutes in between baking.

Baked salmon is ready to serve.....

Chick Peas-Crab Meat-Vegetable Salad And Pear-Peach Fresh Juice

This salad and juice is a perfect dinner for a hot summer night. It has got all proteins and nutrients, comforting,colourful and ofcourse filling too.

Peach-Pear Fresh Juice

Peach                        - 1
Pear                          - 1
sugar syrup/honey    - 1 tbsp (Optional)
water                         - 1/2 cup
Ice cubes

Chop the fruits, grind in mixer/blender to form a puree adding sugar or sugar syrup. In a serving glass fill the ice cubes first and then pour this puree slowly, give a little stir. Peach and pear are sweet fruits, so no need to add sugar. Serve immediately to get that refreshing feel.
I never peel off the skin of any fruit, therefore the juice do not have an appealing look, but the taste is really good.

Ingredients For Salad

Chick Peas                             - 1 cup
Crab Meat                               - 1 cup, shredded
Onion                                      - 1 cup
Cabbage                                  - 1 cup
Tomatoes                                - 1 cup
corriander leaves/cilantro         - 1 tbsp to garnish
Toasted Bread pieces              - 1 cup
pepper powder                        - 1 tsp
Butter                                      - 1 tsp
salt                                          - to taste

For Salad Dressing

Honey                                   - 1 tbsp
Lime Juice                            - 1 tbsp
Pepper Powder                     - 1 tsp
Salt                                       - a pinch

Take all the ingredients for salad dressing in a bowl and whisk nicely to incorporate all the flavours together and keep it aside.

Cook cheak peas adding salt. To a pan add butter and toast the shredded crab meat with salt and pepper, it will be done within 5 mts. Now toast the bread pieces(here i have taken the leftover edges). When it is done keep it aside.

In a big serving dish combine all the thinly chopped vegetables, crab meat and chick peas. Pour the dressing on top of this and toss well,make sure it is mixed well. The toasted bread is added just before serving only. This will give a crunchy feel in every bite.
